Wonder & Sundry turns one!
This calls for cake! Today marks one year of Wonder & Sundry. One year ago I invited you to come on a walk with me and wring a little wonder out of this world. I’m so glad that you’ve joined me—this is fun!
As the year draws to a close, we’ll be looking back on our adventures together in various areas, but today I just want to say thank you.
Gingerbread cake
You know how sometimes you just want a classic cake? I’ve wanted gingerbread cake for weeks. My thought that was to look at a bunch of ways of making them and come up with a recipe that hit the notes I wanted.
I kept eyeing those gorgeous Bundt cakes (I really am into those pretty Pinterest things), but then I saw this simple Spiced Gingerbread Loaf from Sally’s Baking Addiction that had all the flavor I was looking for. Dark gingerbread, loads of spice, and the right texture. The heart wants what the heart wants, and I’ll develop a recipe for a pretty Bundt cake another time.
So I baked Sally’s loaf, pretty much straight. I snuck in a little allspice and nutmeg, because I like them, and I swapped out the orange glaze for an orange cream cheese frosting (and topped that with orange zest and crystalized ginger). I stand by those choices. Otherwise, this is seriously good gingerbread. Why mess with it?
